The roosters and hens of Alsace—whether black, golden, Andalusian blue, or harlequin—and the white and variegated geese of Alsace… are among our excellent French poultry breeds, which are unfortunately becoming increasingly rare… Raising them requires space, especially for the Alsatian hen, which is very active. The Alsatian hen isn’t shy about venturing far from her coop—you’re sure to come across one!

Do chickens show visible emotions? Researchers at INRAE have discovered that their facial skin can turn red to varying degrees depending on their emotional state: in particular, it turns very red during a negative experience and remains lighter in color when at rest.
They’re also attentive to humans! Another INRAE study shows that chickens accustomed to positive interactions may be calmer and more exploratory in a person’s presence, and some even manage to use a human gesture to find food.
